Are the Nuts You Eat Really Raw?

  Since 2007 most (99%) of the organic almonds in the USA must now be steam pasteurized before sale and then dry roasted to remove the excess water from the steaming. That's right: First the Almonds are steamed; then dry roasted to get the water back out, and the law allows them to say they are still RAW!   Hello. Steamed and dry roasted is not raw!
At the present time Almonds and Hazelnuts are the only nuts required to be pasteurized.
Brazil nuts,Cashews,macadamias,pecans,pistachios and walnuts at present,are not required to be pasteurized.Be warned! Some organic nut processors are pasteurizing organic nuts and labeling them as raw even without the law requiring it!

There is an exception to the Federal Rules and I found the exception that allows for RAW Un-pasteurized Almonds to be purchased. For those of you that care about these things, the other exception to the rule is that all foreign imported Almonds DO NOT have to be pasteurized.(that Law is being challenged in the courts,as of May 2012 a Federal Judge has required that all Almonds be pasteurized regardless;it is on hold upon Appeal)

What this policy is doing is promoting foreign farmers and putting American organic farmers out of business. Is this Free Trade??? I don't call it FREE Trade, I call it economic warfare against my fellow countrymen, targeting the farmers primarily, and us, as consumers of their food, secondarily.

Sadly the policy is working, as I spoke to one nut farmer that was forced out of the organic business because the food buyers wanted to pay him the same amount for his organic nuts as they paid for conventional nuts! Where could he go, what could he do? Also he reports, that one year the buyers went to a foreign source and flooded the market with imported nuts that were not up to USA Organic standards. Yet the prices in the stores don't seem to go down. Why is that?
Every one in the conventional supply chain from the broker who buys the nuts to the store where you buy your nuts and seeds makes a profit. Yet the farmer, who bares all the risk, is not guaranteed to make any money at all.

What about a Fair Trade program for American farmers?

When I purchase the nuts from the individual farmers I am dedicated to making sure they are making money on every pound they provide to me. The quality standards and personal integrity I require are high with no exceptions, but they will not lose money when they deal with me.
For this to happen I need your support. The more people that buy their nuts and seeds from me the more farmers I can include in this program

If you wonder why Organic is more expensive here are some reasons why. When you farm organic some years you have to let nature take the crop and you lose the time and money you invested and receive no income for that growing season.
With present testing standards you could probably get away with secretly spraying the crop with insecticides if insects were the problem or use some conventional chemical fertilizers instead of compost and manure.
The committed farmer won't do that, but should his fate be that he must go out of business or be forced to poison our food supply so he can feed his family? The government agencies that should be helping the farmer and us, for it is "our" food supply, are under the control of those that don't care about anything but the love of money. It is our fault for supporting the present conventional system of large uncaring and mindless farming and distribution of our food supply.

One person I spoke to said they were paying $6.00 a pound for raw almonds at a BIG Box store and didn't think it was necessary to pay more for organic.
What they didn't understand is that most shelled nuts ,due to their healthy fat content, will go rancid after shelling, if they are not protected some how. The $6.00 almonds are protected with chemical sprays. One of those chemical sprays is BHT. Without going into a complete course on chemistry, let's just take the T in BHT.

The T stands for Toluene. Sound familiar to anyone? For anyone who has worked with paints, they would recognize it is used as paint thinner, you know, the stuff in the can that has a Skull and Bones symbol on it, with all the health warnings written in fine print on the back!

Yes, that is part of the chemical formula in the compound used to preserve many raw nuts sold in America; BHT.

If anyone wants to debate the fact of its BHT's danger, I could bury them with the paper work proving its toxicity and danger to human health. But I personally believe that it won't be necessary for me to bury them with paper work, as all they have to do is eat plenty of conventional nuts with BHT and then some else can eventually bury them.
Amazing isn't it? Some one thinks they are eating healthy, yet they are in fact poisoning them selves with a neuron disruptor that is fat soluble and is carcinogenic. But boy oh boy, my $6.00 a pound almonds sure are cheaper than all that organic nonsense!

So much for parody.
How is a Raw Organic nut preserved until I can eat it?

Simple, through refrigeration.

It may not be as cheap as BHT or Ethylene Oxide, but it is very effective in solving many of the challenges of handling nuts and seeds, keeping them insect free and fresh until we can eat them. For those who live where it happens, have you ever noticed any insects flying around in the snow? No would be the answer and so it is how Organic Nuts and Seeds are protected.

When you buy Nuts in larger quantities than you can eat in a week or two, just freeze or refrigerate the rest of them. It is that simple, and is the most effective way, so far, to preserve your nuts and seeds.
Most nuts will last a year in refrigeration. Just store them in an air tight container, such as a glass jar with a tight sealing lid.
To store larger quantities you can freeze most nuts and they will last for up to 3 years. Double bag them in plastic freezer bags at least 4 mm thick to protect them from freezer burn, and they will be OK.
The best option is to buy at least a 3 months supply of each nut and seed. Buying in bulk is usually cheaper and assures you have a food supply in case an emergency such as an epidemic or some disaster that keeps you from the local stores and or cuts off your local supply of food.
